Following the first fermentation at a controlled temperature, the pinot noir flower must remains in steel tanks and is aged on fine lees for 5 months. In spring the second fermentation takes place and rest sur le lies for a period of 60 months. The production cycle ends with the disgorging without adding liqueur de expedition
100% Pinot nero.
Guyot arch in medium-textured soil tending to calcareous.
Golden yellow with bright reflections due to the long stay on the lees.
Complex and elegant aromas are appreciated. The long refermentation adds a more mature note to the well-defined floral scents (biscuit, bread, ripe fruit)
Refined and with a great personality. The acid sensation is well balanced with the hints already perceived on the nose and the importance of the wine is clearly perceived; the perlage is very fine and persistent.
Its finesse and harmony lead it to be excellent to accompany the whole meal; its great structure, however, makes it perfect even in the most eccentric combinations.
